Buy a Vodafone sim card, it is much cheaper than the Australian company, Telstra.

Telstra has got reception even on the Outbacks, while with Vodafone you might not have signal in some more secluded areas. So although Telstra is a little more expensive, I would go with them.

Whatever you buy, you should do it before she leaves, it is good to know a contact number while she is still at home and not be worried about her while on the way and there. It is cheaper to buy it in Australia, but you feel better if you by it up-front.
