The great Barbacoa Tacos, Saltillo, Mexico

When in Saltillo, there are several great places to go to eat. You can find great Tacos and Fajitas all over Mexico, but in the North you will find a few that you cannot find anywhere else. Barbaco Taco was my favorite dish. It's a Taco filled with cooked meet. Barbacoa is typically a morning dish and it is apparently the head of a cow:)

The way they make it is quite elaborate; you take out the eyes and tongue, and wrap the head into a paper bag filled with herbs, onions, garlic etc.. then you dig a hole about 2 feet deep. Then you make a fire in the hole and wait until you have coals. You put ashes on top of the coals and then the head on top of that. You cover the head with about 2 inches of soil and then make a fire on top of that.

Leave it cooking for about 14-18 hours.

What you get is one of the tastiest meat tacos you will ever eat.

When in Saltillo, try Los Pioneros. I think they will open around 2am or so, so you hav to go there after clubbing or early in the morning at like 6-7am.

Although the city is located in a desert area the temperatures are not that high and there are winds blowing due to its 1600 meters elevation and The People’s Hill (El Cerro del Pueblo), a large hill with a four-meter cross that overlooks the city.
